 Guidelines:

Give the chicken a marinade.

Add yogurt, turmeric, red chili powder, biryani masala, ginger-garlic paste, and salt to the chicken.

Let it marinade for two hours minimum, preferably overnight for more pronounced flavors.

Prepare the rice:

Add the whole spices and salt to soaked basmati rice and boil until it is 70% cooked.

After removing extra water, set away.

Make the layers of biryani:

Place the marinated chicken in the bottom of a pan with a heavy bottom.

Cover with a layer of half-cooked rice.

Add ghee, chopped tomatoes, coriander, and mint leaves.

Make Several Layers:

Continue layering until all of the rice and chicken are used.

Pour the milk with saffron infusion and biryani masala on top.

Steam Cooking with Dum:

Cover the pan tightly with aluminum foil or a tight-fitting lid.

Cook for 20 to 25 minutes on low heat to let the flavors mingle.

Serve and garnish:

Using a fork, gently fluff the layers.

Add more fresh herbs and fried onions as garnish.

Savor the flavor of your homemade chicken biryani while it's still hot.

Pro Tip: Serve with cool cucumber salad or raita and sprinkle with fried nut slivers for an eye-catching presentation.
