Components:
. 500g of chunked, boneless fish fillets
. Two cups of 30-minute-soaked basmati rice
. One cup of thick yogurt
. 1 cup of birista, or fried onions
. two big, chopped tomatoes
. One-fourth cup of cooking oil
. 1/4 cup clarified butter, or ghee
. half a cup of finely chopped coriander
. half a cup of finely chopped mint leaves
. One spoonful of paste made of ginger and garlic
. One tsp powdered turmeric
. One tsp red chili powder
. One spoonful of masala biryani
. One tsp cumin seeds
. whole spices cloves, cardamom, cinnamon stick, and bay leaf
. To taste, add salt
Marination:
. half a cup of yogurt
. One tsp red chili powder
. One tsp powdered turmeric
. Add salt to taste.
Guidelines:
1. Fish marinating:
Combine yogurt, turmeric, red chili powder, and salt with the fish chunks. Give it at least half an hour to marinate.
2. Rice Parboiling:
Soak the basmati rice and add a bit of salt. Parboil until the rice is 70% done. After draining, place everything aside.
3. Birita, or Fried Onions:
Heat up some oil in a different pan and quickly sauté thinly sliced onions until they become golden brown. Keep aside for adornment.
4. Fish Cooking:
Heat the ghee in a skillet and add the entire spices and cumin seeds. Cook until aromatic.
Add the paste of ginger and garlic, and cook until golden brown.
Stir in the biryani masala, red chili powder, turmeric powder, and chopped tomatoes. Simmer the tomatoes until they are tender and the oil separates.
Add the chunks of marinated fish gently, and cook for a few minutes, or until the fish is just cooked through.
5. Biryani Layering:
Arrange half of the parboiled rice on top of the partially cooked fish in a pan with a heavy bottom.
Add half of the fried onions, chopped mint leaves, and coriander leaves.
As the second layer, add the leftover rice.
Add the remaining fried onions, mint leaves, and coriander leaves on top.
6. Indulgent Cooking
Pour saffron-infused milk or a small amount of milk-diluted food coloring over the top.
For 20 to 25 minutes, cook the biryani on low heat, covered securely with a lid or foil, so the flavors can combine and the biryani steams.
7. Dispensing:
Using a fork, gently fluff the biryani, being careful to keep the fish chunks whole.
Serve hot, with extra crispy fried onions, chopped fresh coriander, and mint leaves as garnish.
