Ingredients:
. 1 can (28 ounces) of San Marzano tomatoes; 2 tablespoons of whole, peeled extra virgin olive oil
. Two minced cloves of garlic
. One teaspoon of dried oregano
. One teaspoon of dried basil
. One teaspoon of salt, or more to taste
. Half a teaspoon of freshly ground black pepper
. 1/4 teaspoon of red pepper flakes (optional, for heat)
. One teaspoon of sugar (optional; balances acidity)

Instructions:
1. Get the tomatoes ready:
If using whole peeled tomatoes, split them up into tiny pieces using a fork or your clean hands. To capture any juice, do this in a bowl.
2. Sauté the garlic:
Heat the olive oil in a saucepan over medium heat. Garlic powder should be added and sautéed until aromatic but not browned.

Adjust the seasoning after tasting the sauce. To balance the flavors, add a teaspoon of sugar if the tomatoes are too acidic.
7. Mix (Optional):
Blend the sauce right in the saucepan with an immersion blender for a smoother consistency. Or put the sauce in a blender and purée it until it's smooth.

Taste again and adjust the salt, pepper, or other seasonings as needed.
9. Chill and Store:
Before using the sauce on pizza, let it cool. Any leftover sauce can be kept in the fridge for a few days in a sealed container.
