Ingredients:
- 1 large onion, finely sliced; 1 medium-sized green cabbage, shredded
- three minced garlic cloves
- two tsp of vegetable oil
- One cup broth, either veggie or chicken
- One can, or fourteen ounces chopped tomatoes
- One tsp of smoky paprika
- Half a teaspoon of thyme
- Half a teaspoon of optionally spicy red pepper flakes
- To taste, add salt and pepper.
- freshly chopped parsley as a garnish

Instructions:
1. Cooked Vegetables:
Heat the vegetable oil in a big, deep skillet or Dutch oven over medium heat. Add the minced garlic and the sliced onion. The onions should be sautéed until transparent.
2. Include Cabbage
To the skillet, add the shredded cabbage. Sauté the cabbage, stirring now and then, until it starts to wilt.
3. Seasonings:
Drizzle the cabbage with smoky paprika, thyme, red pepper flakes (if using), salt, and pepper. Toss to spread the seasonings evenly.
4. Broth and Tomatoes:
Add the vegetable or chicken broth and the diced tomatoes with their juices. Mix everything together.
5. Reduce:
Once the cabbage reaches the required tenderness, reduce the heat to low, cover the skillet, and simmer it for 20 to 25 minutes. Stir from time to time.
6. Modify the seasoning:
If necessary, taste and adjust the seasoning. You can increase the amount of red pepper flakes if you like it hotter.
7. Serve and garnish:
Just before serving, scatter freshly cut parsley over the smothered cabbage. Serve hot as a tasty accompaniment.
