Instructions:

1. Wash and marinate the chicken:

After giving the chicken a good cleaning, cut slits in it.
To make a marinade, combine the minced garlic, ginger, yogurt, lemon juice, red chili powder, turmeric powder, coriander powder, garam masala, cumin powder, salt, and black pepper powder in a bowl.
All over the chicken, including inside the slits, rub the marinade. For optimal flavor, let it marinade for at least 4 hours or overnight.

2. Warm up the oven:

Turn the oven on to 375°F, or 190°C.

3. Get the roasting pan ready:

The marinated chicken should be put on a roasting pan. Peel and chop the potatoes, if using, into bits. Set them up encircling the chicken.

4. Olive oil drizzled on top:

Pour some olive oil on the potatoes and chicken.

5. Baked Roast:

Roast the chicken for one and a half to two hours, or until it is cooked through and golden brown, in the preheated oven. For extra moisture, baste the chicken with its own juices every 30 minutes.

6. Saute the onions:

Sliced onions should be cooked in a different pan until they turn golden brown.

7. Serve:

Allow the chicken to cool for a few minutes before slicing.
Add sautéed onions as a garnish for the chicken.

Serve the roasted potatoes alongside the hot chicken roast.
8. Gravy is optional.

The pan drippings can be used to create a flavorful gravy. Toss in the pan drippings with a little water or chicken stock, simmer, and thicken with a little flour or cornstarch, if preferred.
Savor the delicious and savory chicken roast!
